Sweet potato and feta galette

A savoury galette with foolproof crumbly, buttery pastry. This is my first ever attempt at making a galette. I didn’t even know what it was until someone challenged me to do it. Sure, once I googled it I realised I had seen it before – quite a popular little tart – and how had I never tried it before? The internet is choc-a-block full of different galettes, but mainly sweet ones, which look amazing with a good dollopo of ice cream in the middle. But true to my stubborn streak I decided to try not only a savoury galette but the less travelled road of a square shaped one too. In the process of testing this recipe I got sick of measuring grams for my shortcrust pastry and decided to work on a ratio as a quick go to whether serving two people or six. Falafel burger with halloumi fries

Do you know the feeling when you reluctantly try a new weird dish and fall in love with it? Falafels did that to me. Funnilly enough my local pub was serving a special of open falafel and guacamole during the summer. I had it twice and then just had to try and re-create it at home. Rather than guacamole I added a simple yoghurt and coriander sauce to pair it with the chili powder. It may look like an innocent hand held snack but this is one filling burger. Falafel burger (makes 2) 230g canned chickpeas (drained weight) Zest of one lemon 1 tsp ground cumin 1 tsp ground coriander 1 tsp chili powder 1 tsp salt 1 tbsp tahini 2 garlic cloves 1/2 cup of breadcrumbs 1 egg Flatbreads, red onions and lambs lettuce 1. Dry the chickpeas well with a paper towel. Blend all ingredients together breadcrumbs to one side. Blend until you get a smooth paste. Mix half of the breadcrumbs in and with your hands shape the paste into patties. Cover patties with remaining breadcrumbs and leave it to chill for at least 10 minutes 2. Beetroot and apple salad with walnuts

We all have a dish in our repertoire that we never change, right? Grilled chicken breast, classic salad dressing and the same cake every Saturday. It’s not a bad thing, it often means we have found a really good recipe, but sometimes it means we’re in a cooking rut. I tried beetroot for the first time at 14 and it was mainly because I was anaemic. My grandma knew it was a vegetable full of iron, so she would cook it for me, slice, season and add a drizzle of olive oil just for me. So this is the way I have always prepared them, and I love them this way. But in the interest of trying something new I added texture to my beloved beetroot, and I was so pleased with the result. As we are a lactose free household this recipe works well for us, but some crumbled feta on top would be an amazing addition. Courgette Lasagne

Although I love a bit of meat I can easily go vegetarian five to six days in the week. And I used to be a big meat eater, up to the age of 21, when I was living in Brazil, I could count on one hand the times I had a main dish that did not contain meat. My husband on the other hand, well his reaction is always amusing when I tell him I am not adding any meat to our dinners. Last week I made fresh tomato sauce and he asked me not once, not twice but three times: without meat? As if it was an outlandish concept. We were food shopping and he was trying his hardest to convince me to buy minced meat so that the sauce could become bolognese. What is up with all the vegetarian prejudice?!? I have been making this recipe for years, it’s easy and tasty. I use only courgettes, tomato sauce and cheese but it’s a versatile dish so you can add bacon, ham or even minced meat.
