Easter is around the corner and you frankly can’t miss it over here, the mountains of chocolate eggs in the supermarket are overwhelming. Every year they bring more flavours, I swear! Sure I got the ol’ faithful bag of mini eggs, but when it comes to chocolate nothing brings me as much joy as a spoonfull (or two) of Nutella straight out of the jar. And if you’re reading this, you probably one too. And whether you eat it out of the jar or strictly spread it on toast, get on this because I bet you have most of these ingredients in your kitchen right now. Only 5 ingredients!!!! Death by chocolate does not get easier than this. 5 Ingredient Nutella pie (serves 6) 200g of white cake such as madeira (a couple of days old is best) 2 tbsp cocoa powder, plus extra for suting 50g melted butter 400ml double cream 150g Nutella 1. Lightly butter a 18cm loose-bottomed tart tin, and set aside. 2. Place cake in a food processor and blend it until you get fines crumbs. Chocolate orange brioche rolls

This recipe is a labour of love, with the dough needing to be prepared the night before. It is a recipe to be seriously considered, especially if you would like a different take on your average cinnamon roll. I always make this brioche recipe but for the rolls I have made an adaptation. At first glance it may seem like you have to jump through hoops to get this right, and the lengthy ingredient list looks daunting. But read the recipe once over before starting and it is not as difficult as it sounds. The result is a super pillowy, moreish bun. Chocolate orange brioche rolls 400g plain flour 1/2 tsp salt 2 tbsp caster sugar 7g fast-acting yeast 5 tbsp warm milk 2 eggs + 1 yolk, from large eggs 120g butter, at room temperature Filling: 60g butter, melted 3 tbsp brown sugar 1 tbsp cocoa powder 100g dark chocolate, grated Zest of 3 oranges, grated Glaze: 200g icing sugar 2 tbsp orange juice Method: 1. This bread was based on a recipe by one of my good friends who now lives in Germany. It’s called Osterkranz and I’ve been told it’s traditionally made during Easter. My Easter was not leisurely, worked every single day of the holiday, but on my days off leading up to it I decided to try this recipe. I did as usual started to play with the recipe. I found that the filling made only with poppy seeds was quite overpowering, their earthy flavour is so strong, a few sprinkles go a long way. After a few bakes the recipe had changed quite a bit, with the addition of orange curd and more butter to make a softer dough. Orange and poppy seed bread (serves 15 slices) For the filling: 3 egg yolks juice of 3 oranges and zest 1 tbsp cornflour 80g butter 100g sugar 3 tbsp poppy seeds Whisk all ingredients together apart from poppy seeds. Take it over medium heat stirring constantly until it thickens. Leave it to cool completely. For the dough: 300g strong white flour, plus extra for dusting 1 tsp salt 7g sachet fast-acting yeast 100ml milk 20g butter + 50g melted 1 egg, lightly beaten

Mini raspberry choux buns

My husband and I don’t celebrate Valentines Day. Last year it fell on a weekday and I went to the gym after work whilst he watched a documentary. Romance for me is not about big gestures, heart shaped chocolate boxes or champagne filled dinners. These days my husband’s gift to me is cleaning the bathroom, doing the dishes and taking the dog for a walk when it is raining. Those are the little love acts that fills my heart, that makes me think I married a man that makes me want to be a better, kinder person. He has been suffering recently as I am on a diet and the only treat around the house is 85% dark chocolate so I thought of his thankful face whilst making these mini choux. It has been a long time since I have made choux pastry and I was really nervous to make it again, but these choux buns, also known as profiteroles, turned out so great I broke my diet big time! Apple oat muffins with chai icing

  I am not the best at picking breakfast. It’s for sure my favourite part of the day, but sometimes I  wake up craving for something sweet and unhealthy to have with my coffee like…chocolate cake. In fact when I was a kid, while everyone was having cake for dessert, I used to save a slice in the fridge just so that I could have it for breakfast the next morning. Many people frown upon this practice, so as an adult I kinda made a connection that bran cereal or poached eggs for breakfast show a certain level of maturity. So here’s my compromise: a small muffin, naturally sweetened with bananas, apples and oats with a healthy (ahem) dollop of sugar and chai on top because…well mornings are tough and you should have something to look forward to on a Monday morning. So when you can spare an hour, whip up this recipe and keep it in an air tight container and it will last you for at least half of your week. Dainty pistachio and rose shortbread

    It is not easy to make friends as an adult. It seems that by the time people get to their 30s they have an established, close knit group of friends and no more need apply. For some reason any new acquaintances are nice to have a chit-chat with but it’s hard to get deeper than that. Do we get lazier as we get older? You know when someone cancels a coffee or a meeting at the bar and you actually feel relief? Not because you don’t like that person, but because you don’t have to make the effort to get dressed up and venture out, you can instead stay in and watch Real Housewives in your pyjamas. As children we go to school, we see our friends everyday, whether we want to or not, and the relationships blossom from that daily contact. As adults is a lot easier to hide from social relationships, even at work. Effort is needed to build meaningful relationships. My good, old friends are all in Brazil. Or Abu Dabi, or Germany and I miss the closeness that I developed with them. My work is so social, there are a lot of girls that
