Chocolate praline crêpes

Pancake day is imminent. A day where you are overwhelmed with the towers of Nutella and ready-mix packs as your enter the supermarkets. I have never made pancakes, the American style. In both England and in Brazil they are called pancakes but are made à la French, much thinner. The English tradition is to add lemon juice and sugar to your pancake, but I am partial to a crunchy praline. I am embarrassed to say I make praline waaay too often. At one point I had a huge jar in my cupboard and would sprinkle it on everything – from yoghurts to cakes. This praline cream game is strong and has definitely become a favourite. Chocolate praline crêpes (serves 5-6) For the praline cream 150ml whole milk 100ml double cream 3 egg yolks 3 tbsp cornflour 2 tbsp plain flour 100g mixed nuts 100g sugar 1. Line a baking tray with baking paper – i used a silicone mat. Cook sugar in a pan, stirring, for 5 minutes or until sugar has dissolved. 2. Once sugar has turned into an amber colour add nuts and stir to cover them with sugar. Pour onto prepared tray and allow to cool 3.

Brown sugar and almond popcorn

So we are back. We have good excuses for being away for quite a few weeks…I think getting married is a good excuse for having a little annual leave, right?!?! Especially when you are the bride and the wedding planner. My family were a huge help the night before – and Karla drove from Germany to be my bridesmaid! They did the flower arrangements, set up the dessert table and ironed the linen. But now it is back to normality. It is exciting to be married, I want to do exciting things every night, and obviously life can get in the way of that sometimes. One thing we have always loved doing is going to the cinema together. It is not cheap to go to the cinema though and the food prices are astronomical. And I can’t not munch on something whilst watching Matt Damon go to Mars. So I always pit stop at the supermarket before hand to get ingredients for my favourite cinema food combination: minstrels and salty popcorn. Pimple-be-gone face scrub

I think I have mentioned in the blog before that I am trying to detox from refined sugars, dairy and gluten from my diet, which has been going well and I say this because I truly feel different, from my energy levels to my weight. I did have Yorkshire puddings and chocolate cake last weekend but hey, even the detox needs a break, and I am being realistic about this, I don’t want to completely cut gluten, dairy and sugar from my diet because I know it would be unsustainable for myself and also because I believe few things bring me as much happiness as butter and chocolate do. This new regime has made me more interested in reading about food and I came across an article about Pulitzer-nominated Shann Nixx who moved from California to Wales and now has a goat farm. She experimented with goat’s milk to make a natural remedy for her son’s eczma and she was amazed by the results.
