Chicken noodle soup

I wished for the weather to be colder a month ago. It was too warm for October I said. This week the cold really hit me, back to wearing gloves just to get into my car in the car park. And it is not even snowing yet in the south of England, unlike the north, which means it is just drizzly, a wet cold with a mist that seems to get through to your bones regardless of how many layers of wool you got on. This is why people put weight on over christmas, it is not the turkey or the chocolates or the mulled wine, it is the constant search for comforting food that will warm up your insides. I have just the thing for you. And it will not add any extra pounds. Chicken noodle soup for one 1 chicken breast 1 tbsp of bouillon vegetable stock 1 tbsp of soy sauce 175g fine rice noodles (ready to work or 65g of raw noodles) 1 small carrot, cut into cubes 1/2 cup of frozen sweetcorn 1/2 cup of kale Handful of finely sliced spring onions 1. Vegetable stock paste

Day by day my cooking is moving further away from processed food or products that are mass produced. It is not the easiest thing to cook with those principles, and I definitely can’t see myself being completely self-sufficient or live the rest of my days hunting and gathering. But testing recipes that remove a pre-packed ingredient gives me hours of entertainment. Especially when the results work out well. So that is how this vegetable stock paste recipe was born. We get through a lot of vegetable stock in my house, mainly as a soup base – a staple in our weekly menu – but also because I use a lot of coconut milk in my cooking (we follow the paleo diet) and vegetable stock helps me tie in the sweetness of coconut milk in savoury dishes. In the past I have tried to buy the least chemically modified stock I can find in the shops. I used to buy an organic brand, with no added flavours, but when cooking with it I always had these intrusive thoughts that the flavor in my food was coming from a powder. Growing up I was a very fussy eater. I never forget being told by one of my aunts that all the food I wasted throughout my life would be waiting for me to eat it when I die. Grim, right? And a little mean. But recently I have been thinking a lot about food waste. Food is a powerful thing and at the moment it’s being used by rebels in Syria to keep civilians under control. It hurts to hear that children are eating grass in order to not feel hungry. I know people differ greatly in their views on war but I felt so frustrated that I am not able to fly over there and help. But there are other ways to bring awareness to this issue. In Europe we wasted 89 million tons of food in 2013 and the UK is the worst offender. You are now thinking that it’s the big supermarkets fault, right? Wrong. Household waste is the biggest contributor to these numbers. Chorizo and bean soup

I have a thing for soups, always have. My mum knows it is the food to make me when I am feeling a little down. It is comforting and full of nutrients and you can make magic with it: get your leftovers, add a little stock, some butter and blend. Or don’t blend and get a chunky one instead. So it won’t surprise you that when I found myself with very little in my cupboard and a hungry boyfriend to feed I turned to soup. It is a super cheap dinner to make with only 4 ingredients: potatoes, beans, chorizo and onions. The boy is my harshest critic so I was pleasantly surprised when this became his favourite soup. I have cooked it a dozen of times now. But it is summer now, soups belong with winter/autumn I hear you say. Wrong! Having a hot soup on a hot day actually cools you down. Hot food adds heat to your body increasing the rate at which you sweat consequently helping you to cool off. The soup that will make you question your beliefs

A lot of people are very judgemental when it comes to soup. I am definitely not part of this group. When I was growing up I was surrounded by the opinion that soup is something you eat when you are feeling ill, but I have never let myself get influenced by this thought and more often than not I would be begging my Grandmother’s to make me soup. And let me tell you, it takes a lot to become a soup fan when you grow up in a town where the average temperature is 32 ̊ Celcius.  Since becoming an inhabitant of the north hemisphere my love for soups has intensified. I could make a list, on the spot, of the hundreds, hundreds of reasons I love soup. Here are a few:  -A good soup can warm you up in the winter months and cool you down when it’s hot (yes, believe you me, there are some delicious summer soups!)  -Yesterday’s soup is better than today’s soup. But this is a good thing, imagine leftovers that are better than when they were freshly cooked.  -I love playing with textures, creamy soups, with bitey vegetable, maybe croutons on top or sprinkled
