Soft cinnamon pretzel with mocha dip

Soft cinnamon pretzels with mocha dip

As teenagers our constant evening snack were soft pretzels. My mum used to make two flavours: pizza and cinnamon sugar. My parent’s home is always the central hub at Christmas for all of the sibling living far away. For us Christmas is not only about spending time in the kitchen but also trying new foods. Yep, Turkey is rarely the main dish for Christmas dinner, this year we are making steak with port sauce. But there is always space for the golden oldies and I am so glad that I tried this recipe when we were all together Even though my dad burst my bubble when he pointed out that my knots were a bit weird (a quick Google search showed that he was 80% right… however some people do knot like I do) it was so nice to hear my brother say that taking a bite of the pretzel took him back to 20 years ago. Isn’t that what every baker wants to hear? Soft cinnamon pretzels (yields 20) 300g plain flour 30g melted butter plus more for greasing 1 1/2 tsp of easy yeast 1 tsp salt 140ml warm water Cinnamon and caster sugar ( I used a

Chocolate yoghurt cake

It has been more than a month since my last post. It was not planned – I said I was going to do a whole month of Brazilian food to celebrate the Olympics – but it did not turned out that way.  After a break in Cornwall and then a string of family members coming over to stay, it felt like I left life up in the air, and when I arrived back home it all came crashing down. You know, piles of unopened letters, cleaning to do, I couldn’t even start to think about recipes for the blog. In fact this has been the first week in a whole month that I have opened my computer. Then I don’t know why but amidst the chaos I decided to make one of my least favourite baking recipes: cake. I am cake’s biggest fan, just have a look at my Pinterest page and you will see beautiful cakes, frosted like a sculpture, with the perfect rise and colour. I dream of emulating that, however this is rare as I am by nature a chaotic cook. But baking cakes is almost like a science, you need to do things by the book.

Cold brewed coffee

It was October when I first moved to England, and one of my earliest memories was the changing colours of the leaves…and the shocking amount of tea people drink here.  The stereotype is real, it is the land of tea, dare I say more than India itself. The etiquette around tea is also something the British don’t joke about, it is close to a crime here to get up to make yourself a cup of tea and not ask whether anyone else in the room wants one. I think this strong tea culture froze the progress of coffee. Literally, freeze dried coffee is what you’ll get if you ask for one.  It looks like they left that for the continent to deal with. Growing up in Brazil there were no other alternatives but to have coffee in the morning and a little shot in the afternoon to keep you awake in the heat. I only drank tea when I was ill, and to this day I cannot get on board with the drink. I felt I had little choice but to give in to instant coffee and I couldn’t stomach it. But beggars can’t be choosers and grew to accept
