Apple oat muffins with chai icing

  I am not the best at picking breakfast. It’s for sure my favourite part of the day, but sometimes I  wake up craving for something sweet and unhealthy to have with my coffee like…chocolate cake. In fact when I was a kid, while everyone was having cake for dessert, I used to save a slice in the fridge just so that I could have it for breakfast the next morning. Many people frown upon this practice, so as an adult I kinda made a connection that bran cereal or poached eggs for breakfast show a certain level of maturity. So here’s my compromise: a small muffin, naturally sweetened with bananas, apples and oats with a healthy (ahem) dollop of sugar and chai on top because…well mornings are tough and you should have something to look forward to on a Monday morning. So when you can spare an hour, whip up this recipe and keep it in an air tight container and it will last you for at least half of your week. Recycling Christmas: Spelt and marmalade apple crumble

Merry back to normal. And I am actually glad Christmas is all over. It did not feel like Christmas to me as I was working and then as soon as I got my first day off of the season my immune system gave up. I have never been that ill, can’t-get-out-of-bed ill, the kind that you want to kick yourself for not appreciating all the days you were healthy. Even after what seemed like recovery I did not feel like myself. I decided to get back on track this week and it was hard, had to peel myself off bed to put my running gear on, and quite frankly felt sick and had to stop halfway through. Another thing that I had to tackle was the massive amount of leftovers in my fridge. I had my in-laws over and they brought a very, very generous amount of food. So trying to figure out what to do with it all has been a creative challenge, which I decided to call recycling Christmas! This is for sure the ultimate crumble recipe, and I say this as someone who has made many, many crumbles before and never got the crumble ratios of flour

One ingredient apple caramel sauce

When it comes to food I am sometimes like the spoiled rich girl that has a walk-in closet full of clothes but feels she has nothing to wear. Some mornings I will open my cupboards over and over, waiting for brownies to magically appear, when I should be cooking all the eggs and porridge oats I have bought for the week, as an encouragement to have full, healthy breakfasts. I needed to accessorise my porridge with a new topping, and finding out that you can turn pressed apple juice into caramel was the answer. One ingredient apple caramel sauce 500ml of pressed apple juice (not from concentrate) 1. Add juice to a pan and heat it until the mixture has halved in volume and leave it to reach a rolling boil. Leave it to boil for 4 minutes.  Half a litre of juice you’ll leave with enough apple caramel to sprinkle over your porridge for a whole week. No need to add any sugar, it is perfectly tangy and sweet on its own. Add to your porridge with a sprinkle of nutmeg, berries and pumpkins seeds. It also tastes great with gin. But leave that one for dinner time.

Apple and caramelised salted nuts ice cream

The freezer situation in our house has caused a few arguments. We have a small apartment and therefore a small fridge-freezer. I am completely in control of all food related things in our household: the planning, shopping and making. Not because the husband is not interested, but because I take so much enjoyment out of it, and he obviously does not mind. Testing recipes for the blog means a lot of non-photographic worthy creations, but still edible. I hate to throw anything away, my husband knows this and to be honest he is often in a bit of awe about it. But having to create new dishes with leftovers is something that gets my creative juices flowing. This week, sick of seeing so many apples sitting in the fruit bowl, I started to panic that they would go off soon as the two of us would not be able to eat it all. I don’t eat apples, but am drawn to them when they are in a dessert. I first tried appleasauce as a substitute for butter on this banana loaf cake, and feel in love with the power of applesauce. Applesauce banana loaf [Dairy Free]

I am sitting here trying to describe how I have been feeling in these last few days. Tired is the first adjective that comes to mind. At first I thought the word was so salient in my mind because of how the physical side of my job had left me sore in my legs and arms, with 5 am starts thrown in the mix too.  The first course of action for me to counteract this was to dive into a diet of spirulina smoothies and sugar free snacks. The food has given me an energy boost, but on my days off I can’t shake off the wanna-be-in-bed-all-day feeling, so I had to think a little harder about what else I was be doing wrong. Thinking being the key word here, I was in my head too much. I have an emotional job, where you make decisions about people’s lives, and that is something that can be highly rewarding at times, but on the other hands it makes me over analyse every decision I make. It leads to a very judgemental cycle in my head and by the time i get home I am in this deep emotional pit, no one can rescue

Beetroot and apple salad with walnuts

We all have a dish in our repertoire that we never change, right? Grilled chicken breast, classic salad dressing and the same cake every Saturday. It’s not a bad thing, it often means we have found a really good recipe, but sometimes it means we’re in a cooking rut. I tried beetroot for the first time at 14 and it was mainly because I was anaemic. My grandma knew it was a vegetable full of iron, so she would cook it for me, slice, season and add a drizzle of olive oil just for me. So this is the way I have always prepared them, and I love them this way. But in the interest of trying something new I added texture to my beloved beetroot, and I was so pleased with the result. As we are a lactose free household this recipe works well for us, but some crumbled feta on top would be an amazing addition.
