Creamy orange and carrot smoothie

This smoothie has a great contrast of zing and cream as it blends carrot, ginger and Alpro yoghurt. I have never been a great veg eater, and although no longer as fussy as I used to be as a child (brocollini is now a staple), I often “forget” to add vegetables to my food.So I have decided to drink it! I have been using my Ninja nutri bullet blender everyday during lockdown to make what I call “smoothie snacks” (a good alternative to crisps, but the jury is still out on that). My recent favourite is this creamy orange and carrot smoothie. Ingredients:200ml orange juice1 small carrot, peeled and chopped100g alpro vanilla yoghurt1/2 inch piece of ginger, peeled and chopped 1. Blend it all together (I also prefer to strain it for a smoother drink)Yep, that easy to get some vitamin c! Click here to explore other smoothie recipes.

Apple oat muffin with chai icing

Apple oat muffins with chai icing

I am not the best at picking breakfast. It’s for sure my favourite part of the day, but sometimes I  wake up craving for something sweet and unhealthy to have with my coffee like…chocolate cake. In fact when I was a kid, while everyone was having cake for dessert, I used to save a slice in the fridge just so that I could have it for breakfast the next morning. Many people frown upon this practice, so as an adult I kinda made a connection that bran cereal or poached eggs for breakfast show a certain level of maturity. So here’s my compromise: a small muffin, naturally sweetened with bananas, apples and oats with a healthy (ahem) dollop of sugar and chai on top because…well mornings are tough and you should have something to look forward to on a Monday morning. So when you can spare an hour, whip up this recipe and keep it in an air tight container and it will last you for at least half of your week. Apple oat muffins with chai icing (yields 10 small muffins) 100g oats 100g plain flour 2 eggs 90g softened butter 80g golden caster sugar 1 banana, mashed

Tahini salad jar

January is often known as the month when we stop doing things. Smoking, eating chocolate, drinking alcohol.  Every single one of my friends is cutting something out of their life this January thinking that they overdid it in December. By now very few are still going strong. This year I took the perspective to add good stuff rather than focusing on taking out the bad. Salad mainly. Everyday now I am aiming for a minimum of 5 cups of vegetables a day. I must say sometimes I have to force myself to push those last leaves into my mouth but boy, do I feel better for it. After three weeks of very little processed food (the odd cake still features) my husband convinced me of having burger and chips (yes I blame him). The next day I woke up with the worst hangover I have ever had. The power of food is really astounding, hindsight makes you think that it should have been obvious – junk food makes you feel like junk – but there’s nothing like an aversive reaction to keep the new year change going strong into February. To keep my veggies interesting I have been trying
